Icelandic Horse Cookies

Stacey Kimmel featured the cutest Icelandic horse head cookies assembled out of Pepperridge Farms Milano cookies vanilla wafers, icing, Tootsie Rolls, etc on her blog Behind the Bit.  I made a herd of them for  Horse Club meeting over the weekend.  The cookies were a huge hit--whimsical, delicious, lots of chocolate--what could be better.  If I made a mistake, I just added more icing as mane since these were suppose to be Icelandic horses.
